WHATS COOKIN KJ: AVOCADO TOAST

Start the New Year off on the right track. Avocado is one on the healthiest fats you can eat. ENJOY!! 

INGREDIENTS:

1 cup whole milk ricotta, (drained)

1 tablespoon grapeseed oil 1 lemon (zest)

1/2 lemon (juiced) 1 avocado(sliced)

4 slices of a Healthy bread (toasted)

2 tomatoes(sliced)

3 tablespoon of sunflower seeds

1 tablespoon capers(rinsed and chopped)

Sea salt and black pepper (to taste) 

DIRECTIONS:

In a bowl mix ricotta, capers, oil, lemon zest, lemon juice, salt, pepper. Set aside for about 5 minutes, so all the flavors can come together.  Top each slice bread with ricotta mixture, slices of avocado and tomato and sunflower seeds and a pinch of salt and pepper(optional)/ Cut diagonally. . 

COOK’S NOTE: You can use extra virgin olive oil and add slices of red onions!
