Carrot Salad

If you’re looking for a healthy and delicious carrot salad recipe, look no further! Carrots are a great source of Beta Carotene and are naturally sweet. Try this awesome recipe and most importantly, ENJOY!! INGREDIENTS: 1 bag (10oz ) or 4 cups shredded or matchstick-cut carrots 1/2 cup raisins 2 medium green onions (thinly sliced) 1/4 cup low-fat mayonnaise 2 tablespoons orange juice Sea salt to taste DIRECTIONS: In a medium bowl, mix all ingredients. Cover refrigerate at least 30 minutes before serving COOKS NOTES: You can add a little sugar If you like it sweeter. This is great for a low-fat snack. Cucumber Salad with Dill and Lemon Dressing

This is the perfect quick and light salad for the summer and a great dish to take to a cookout.  ENJOY!! INGREDIENTS: 1 English cucumber (sliced) 1 Tablespoon apple cider vinegar 1-2 Tablespoon olive oil or grapeseed oil 1 Tablespoon fresh dill (chopped) 1/2 teaspoon fresh lemon juice 1-2 teaspoons of cane sugar of agave nectar Sea salt and pepper (to taste) DIRECTIONS: In a medium bowl, toss together cucumber, oil, vinegar, dill, lemon juice, sugar, salt, pepper. Let chill for 10-15minutes. Cook notes: This salad is great with grilled chicken or fish. Add more sugar if you want it sweeter and more vinegar and lemon juice if you want it tangier. Chopped Vegetable Salad

Need a different spin on your salad. Tired of just lettuce and tomatoes, well try chopping up a variety of vegetables and making that your salad! ENJOY!!
