SALMON WITH AVOCADO SAUCE

Salmon is a great staple to add to your meals it's low in fat, calories, and high in protein and loaded with omega-3s. ENJOY INGREDIENTS: 4 Salmon (6 ounce fillets) 1 avocado (diced) 1/2 cup Greek yogurt 2 tablespoon fresh dill (chopped) 1 clove garlic (chopped) 2 tablespoon fresh lemon juice 1 tablespoon lemon zest  1 tablespoon olive oil Sea salt and pepper (to taste)   DIRECTIONS: Preheat oven to 400 degrees.  In a small mixing bowl combine yogurt, dill, garlic, lemon juice, and zest, salt and pepper in a blender or food processor until creamy. KALE AND QUINOA SALAD

Kale and quinoa are two power foods and when mixed together makes a light, healthy, and very satisfying dish. ENJOY! INGREDIENTS: 1/2 to 1 bunch lacinato kale.  1 cup cooked white quinoa(according to package directions ) 3 tablespoon red wine vinegar 1 cup grape tomatoes (halved) 1/4 cup crumbled goat cheese 4 tablespoon grapeseed oil 1/3 cup pine nuts (toasted)  DIRECTIONS: Washed, stems removed and leaves cut into 1-inch strip and steep kale in hot water in a large bowl for 1-2 minutes, remove and pat dry.  Sea salt and pepper (to taste).  In a small bowl, combine the vinegar, salt, pepper. ENJOY!!  INGREDIENTS: 1 cup whole milk ricotta, (drained) 1 tablespoon grapeseed oil 1 lemon (zest) 1/2 lemon (juiced) 1 avocado(sliced) 4 slices of a Healthy bread (toasted) 2 tomatoes(sliced) 3 tablespoon of sunflower seeds 1 tablespoon capers(rinsed and chopped) Sea salt and black pepper (to taste)  DIRECTIONS: In a bowl mix ricotta, capers, oil, lemon zest, lemon juice, salt, pepper.
