RECIPE OF THE WEEK: YAMS W/PUMPKINS SEEDS

These yams could be a meal by themselves. I would like to think this is probably one of the healthiest ways to prepare yams.  ENJOY!!

INGREDIENTS:

1large yam
1/4 cup pumpkins seeds
1 tbsp dried oregano
1 tbsp dried basil
2 1/2 tbsp coconut oil
Sea salt and pepper to taste

DIRECTIONS:

Preheat oven to 300F. Cut yams in wedges or chunks.  In a bowl, combine coconut oil, pumpkins seeds, oregano, basil, salt and pepper. Add yams use clean hands in stirring up the mixture to make sure all pieces are covered with the mixture.  Spread yams on a baking sheet oil with coconut oil; bake for 25 to 30 minutes or until yams are tender.

COOK’S NOTES:  Serve with ketchup.  For crispier yams line baking sheet with parchment paper!
