This is the perfect quick and light salad for the summer and a great dish to take to a cookout. ENJOY!!
1 English cucumber (sliced)
1 Tablespoon apple cider vinegar
1-2 Tablespoon olive oil or grapeseed oil
1 Tablespoon fresh dill (chopped)
1/2 teaspoon fresh lemon juice
1-2 teaspoons of cane sugar of agave nectar
Sea salt and pepper (to taste)
In a medium bowl, toss together cucumber, oil, vinegar, dill, lemon juice, sugar, salt, pepper. Let chill for 10-15minutes.
This salad is great with grilled chicken or fish.
Add more sugar if you want it sweeter and more vinegar and lemon juice if you want it tangier.
Double or triple recipe if making for a cookout.
