Cucumber Salad with Dill and Lemon Dressing

This is the perfect quick and light salad for the summer and a great dish to take to a cookout.  ENJOY!! INGREDIENTS: 1 English cucumber (sliced) 1 Tablespoon apple cider vinegar 1-2 Tablespoon olive oil or grapeseed oil 1 Tablespoon fresh dill (chopped) 1/2 teaspoon fresh lemon juice 1-2 teaspoons of cane sugar of agave nectar Sea salt and pepper (to taste) DIRECTIONS: In a medium bowl, toss together cucumber, oil, vinegar, dill, lemon juice, sugar, salt, pepper. Let chill for 10-15minutes. Cook notes: This salad is great with grilled chicken or fish. Add more sugar if you want it sweeter and more vinegar and lemon juice if you want it tangier. Avocado Chocolate Pudding


No more feeling guilty about eating that chocolate pudding, this recipe is a healthy way to use avocados. ENJOY!! INGREDIENTS: 3 large avocados, (soft and ripe) 1/4 cup cacao powder 5 to 6 Tablespoons coconut milk 1 Teaspoon vanilla extract 2 Teaspoons coconut oil 2 to 3 Tablespoons agave nectar or raw honey (to taste) DIRECTIONS: Combine avocados, cacao powder, coconut oil, coconut milk, vanilla extract, agave nectar or honey in a blender.
