Carrot Salad
If you’re looking for a healthy and delicious carrot salad recipe, look no further! Carrots are a great source of Beta Carotene and are naturally sweet. Try this awesome recipe and most importantly, ENJOY!!
INGREDIENTS:
1 bag (10oz ) or 4 cups shredded or matchstick-cut carrots
1/2 cup raisins
2 medium green onions (thinly sliced)
1/4 cup low-fat mayonnaise
2 tablespoons orange juice
Sea salt to taste
DIRECTIONS:
In a medium bowl, mix all ingredients. Cover refrigerate at least 30 minutes before serving
COOKS NOTES:
You can add a little sugar If you like it sweeter.
This is great for a low-fat snack. I used tricolor carrots in this recipe but regular shredded orange carrots are fine.
